Introduction:
Water is the necessary substance for the survival of life on the earth. Without water, the existence of life on earth will be impossible. This tremendous liquid substance, which is so easy to find, shows strange behaviour regarding its properties. It has been proved that water shows different properties than other liquid substances, such as fluctuations in its viscosity. If seen through a glass, ordinary water shows no interface; however, if we observe it on a micro-level, we can see small local regions of similar density with an interface that gives us evidence about the two liquid states of water.
Water is a strange liquid and has properties that are quite different from other fluids. One such property is that ice can exist in more than one form, including high density and low-density form. Therefore, after seeing such behaviour in ice, scientists thought that water could also exist in more than one form. However, proving it was tough to do. Scientists have been working on this for decades to verify that the two liquid states of water at low temperature with clear interface present between them.

Two liquid states of water:
The study carried out at Stockholm University proved that by rapidly changing the pressure at the temperature of 63⁰C, they observed the two liquid states of water with an apparent density difference of 20%. The study was carried out using the x-ray laser in such a fast way that they were able to observe one liquid form of water changes to the other liquid form before the water froze. This experiment proved that the liquid states of water are real and can unimaginably help us in upcoming technologies and understand biological-related phenomena.

Two liquid states of water influence the biology of creatures:
Fivos Perakis, Assistant Professor in Chemical physics at Stockholm University, said,

“I wonder if the two liquid states as fluctuations could be an important ingredient to the biological processes in living cells.”

He also mentioned,

“The new result can open up many new research directions also about water in biological sciences.”

Two liquid states of water in defence of climate change:
Marjorie Ladd Parada, Postdoc at Stockholm University, said,

“Maybe one of the liquid forms is more prominent for water in small pores inside membranes used to desalinate water.”

He also mentioned,

“I think the access to clean water will be one of the major challenges with climate change.”

Conclusion:
By varying the temperature and pressure more desirably, we can observe two liquid states of water. At low-temperature, researchers were able to attend two liquid phases and the interface between them distinctly.
